Recipe Sunday

Oven-Fried Pork Chops
Makes: 4 servings


  • 1/2 cup all-purpose baking mix, Bisquick
  • 1/2 cup Italian-style panko (Japanese bread crumbs)
  • 1/4 cup all-purpose flour
  • 2 large eggs, lightly beaten
  • 4 boneless, center-cut pork chops
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  1. Preheat oven to 425 degrees. Place a wire rack on a baking sheet; spray rack with nonstick cooking spray.
  2. In a shallow dish, combine baking mix and panko. In 2 separate shallow dishes, place flour and eggs. Sprinkle pork chops with salt and pepper. Dredge pork chops in flour; coat in egg, and dredge in baking mix mixture. Place pork chops on prepared rack. Bake for 20 to 25 minutes, or until done.
